There's a series of apps called "Simple-something" (like, simple-clock) ... Thing I like is the launcher, and that the apps ask for no extra permissions ... Very lightweight but has all it needs to have

RadioDroid - internet radio. My favorite station is Swiss public domain radio classical (they also have jazz.) Also good for BBC radio and various public radio stations in the US
OsmAnd - open source map. You can download and use the maps offline. I use it way more than Google maps

I also like pedometer in Fdroid. It's simple. Always runs in the background but is light on resources. No gps or data collection.
