Step your pancake game up
Don't use a premade mix. Make your own mix. It's not hard. Flour, baking soda, baking powder, salt, sugar.
Don't ruin it trying to make protein pancakes. Those are for you. Give the kids that raw uncut puro.
Whip the egg whites separately! Game changer.

My recipe fits in a toot with room to spare.
1. 2 eggs, 2 tsp brown sugar, 2 tbsp veg oil. Whisk ’em up.
2. 2 c milk, 2 c flour. Mix. Opinions vary as to which goes in first. People say don’t mix too much, I don’t find it makes much difference.
3. 3 tsp baking powder. You’re done. Leave the batter a few minutes.
4. *Must* cook them on a cast-iron surface with butter. You won't get the burner level dialed in right until you've done a couple batches.
@timbray @mekkaokereke similar recipe here - sub melted butter for veg oil. Variations include subbing egg nog for milk (may adjust up baking powder to avoid pancakes being too heavy). Btw almond milk works instead of regular (but can be thin).
Yaaas, butter! Also: buttermilk (instead of milk) reacts with the baking soda and you get fluffiness, if you don't over-mix.
Throw fresh blueberries ON TOP of the pancake you just started in the pan, right in the still-raw dough. Short-order cook trick I once saw.
